FIVE TOP TIPS FOR GLUTEN FREE BAKING
Follow the gluten-free recipe carefully. Sounds silly but if you want to make a Gluten-free cake, stick to Gluten free recipes as they are specifically written using specific ingredients, measurements, and methods.
Eggs Are Your Friends. To improve the fluffiness of cakes, try adding 1 additional egg. The egg can provide more lift and since we don't have gluten to work with, an egg can be a good replacement.
Add more liquid/fat to gluten-free recipes. Like butter, water, milk or oil can help keeping the batter moist.
Measure your ingredients carefully.
Not all gluten-free flours are the same! Yes that is true!
Let batters rest before baking. Once your batter is prepared and ready to go into the pan, allow it to sit for 15-20 minutes at room temperature. This helps your final product have great texture.
